Dear Peter,
It's almost one year now since you have been gone. I have stopped asking 'why' and now am at peace knowing you're in a better place. I think of you every day and pray that you and the family are watching over all of us and sending us your blessings. I miss you and will love you always. May your memory be eternal.
Love,

Dear Zack - I was very saddened to hear of Peter's death. When bad things happen to good people, life seems so unfair. Peter was a loving husband and father, and you must miss him very much. His love and goodness is eternal and will be with you always. Love never dies. May his memory be eternal. God bless you at this difficult time,

I have known and worked with Peter for the past 10 years. Peter was a very passionate person. He was the man to follow, and would always take the right path in life. I remember when I told Peter that I was naming my 3rd child "Peter", his exact words were "Peter is a great name". I can tell you that not only is Peter a great name but Peter Economos was a great man. Zach, George and John our prayers are with you.

Inspirational, Motivational and Impactful!
Peter Economos was a Leader's Leader. Peter impacted so many people in his short personal and professional life. Always giving, always caring, always sharing his time, knowledge and resources.
Peter was the most generous person I have ever known.
His influence on my personal and professional life is inmeasurable--I am truly a better person having known, been mentored by, and been loved by Peter.
Words cannot describe the loss of Peter Economos.
His Legacy lives on in us........

Peter,
The forty years that we have been friends as close as brothers have brought to me only two regrets.
The first is the fact that we together will not experience our grandchildren becoming friends as we experienced the growth of friendship of our children. The second is the the poeple that will not experience the warmth and love of your personality because you have left us far too soon.
WE WILL NEVER FORGET YOU!

A loss that affects many. Peter was a most gererous man, willing to help and assist any and everyone in the culinary community. A very sincere and giving person. A colleague and friend for thirteen years. There was noone who was more willing to assist the culinary community whether it was monies to help a student stay in school, a charity that he could support or a business opportunity he could promote. All I can say is that we are all better people for knowing Peter Economos. I will always remember him.

Uncle Pete,
I'll never forget all the times you would come to our house for Thanksgiving and Christmas, and likewise when we went to yours. The stories you would tell were legendary! I got the biggest thrill just listening and hanging on every word--we all did. I can't tell you now how sad I am just wondering what you're doing now that you're not here to cheer us all up. I will always remember the basketball games and all the words of wisdom that never seemed to stop. You were ALWAYS there for a quick story and pick me up--you had a special talent for that--mom would always say that to us. From the "condo" to the "Palos Hills Resort", I will remeber it all! Uncle Pete, I know there's no possible way to encapsulate everything you've meant to me in my 31 years, but I hope you're sitting with mom and dad, Uncle Gus, Uncle Tony, Uncle Eddie, and the generations of family members we've never met before, and are having one hell-of-a-time! I LOVE and miss you so very much!! Until we meet again, your devoted nephew.

Zack,
I'm sitting here, reaching for words that may help you with OUR loss - but I just can't find them. As I look back, I have no clue how many basketball games (parctice, pickup, tournaments, Wed. nites at the Church) I played with Pete. I can see him with his hard dribble and a 'no-look' pass ... and the sometimes too hard bank shot going in for two. Pete was funny, sincere, exceptionally well spoken and a great teammate. He had an enviable zest for life. I am so proud to say that I knew Pete and considered him a friend.
I still can't find the words other than, I am so sorry.

Peter is my beloved son Jerry's godfather. We will miss him terribly. Fondly referred to as our "coffee guy" I will miss his wonderful stories, steadfast support and love. I will never forget the magnificent toast he so generously gave at Jerry's christening and am happy that we have it on film so that I may share with Jerry as he grows up. Our love and prayers are with Zack and "the boys." Today and always. XOXOX

Peter was an exceptional person. He was a true friend. He was smart and funny and caring. He made you laugh and you always left him smiling and looking forward to the next time you would see him.
To not have Peter with us here on earth, will be difficult and he will be deeply missed; but his life left us with many wonderful memories that will keep him with us forever.
Our thoughts and prayers are with Peter and his family.

Peter was indeed a truly remarkable person, who will be missed greatly. Peter inspired all that he came in contact with his enthusiasm of life, his generosity to share his wealth of knowledge, and his efforts in his community. Peter taught me a great deal, including how to share with love, a great cup of Coffee. I will miss him.

Peter was a wonderful friend and person. He made a difference in my life and career. He always wanted to help me network with those I could serve, as well as those who could help me. He was a consumate salesperson too. I learned much from him. He left us too soon and will be truly missed. Peter was "one of the good ones" and a legend in the Chicago food industry.
