Beloved wife of Joseph Simon; devoted mother of Ronald (Chelle), Howard (Merle), James (Joan) Simon and Jodi (Kent) Koplin; devoted mother-in-law of the late Debbie Simon; cherished grandmother of Amy (Brendan) Cundiff, Lonni (Gary) Howington, Ryan and Kya Koplin; Evan (Noelle), Doug (Sandy), Brad (Meaghan), Jordan, Ian, and Micah Simon; adored great-grandmother of Owen, Maddie, Griffin, Nathan, Jacob, Anna and Will Simon, Riley and Dylan Howington, Jack and Cody Cundiff. Joe, Ron, Chelle & All Family Members:
We will always have fond memories of Eileen and the wonderful person she was with all of us. We both smile a great deal when we remember our long weekend trip a couple of years ago to Freeport -- coordinating ten people took a great deal of effort, but just being herself, Eileen was able to breeze right through it. What a wonderful woman.
