Dennis Bird Obituary

Dennis Clark Bird A True Gentleman "You shall go out in joy, and be led back in peace; the mountains and hills before you shall burst into song, and all the trees of the field shall clap their hands." -Isaiah 55:12 Dennis Clark Bird, loving husband and father, caring son and brother and loyal and trusted friend, passed away unexpectedly Tuesday, Nov. 14th. Dennis was a kind and gentle man, a caring and loving man, an elegant and humble man, a renaissance man and a true gentleman. He was born August 30, 1943 and at an early age had suffered from polio. His mother Helen had suffered from polio at the same time and she passed away from the disease, leaving Dennis with his father Clark. Dennis was Salt Lake's most eligible bachelor until age 38, when he met and married "The Love of his Life", Linda Pelton Mortensen in November 1982. They returned to Utah earlier this year after living in Southern California for almost two decades. He graduated from Highland High in 1962. Dennis went to work for Boyd Summerhays, a beloved friend and mentor at the Balsam Embers, Salt Lake City's premier restaurant and continued there through his early twenties. He served with distinction in the U.S. Army Reserve 328th General Hospital at Ft. Douglas from 1964 through 1970. It was during this time that Dennis moved to Alta, Utah and began his lifelong career as a chef at the Rustler Lodge. Dennis loved Little Cottonwood Canyon and fresh powder skiing. Later he became a Certified Executive Chef for five-star restaurants from Sun Valley to San Francisco. He eventually became a partner in 1979 with Royce's Restaurant at the Yarrow Hotel in Park City and finally opened his own restaurant, Bird's Caf‚ that he opened with his wife Linda in the 1980's. We now know just how many lives he inspired and mentored through all of his great accomplishments. Dennis was a member of the American Culinary Federation, Beehive Chapter and received the "Chef of the Year" award in 1987. He also received numerous honors in his profession of the Culinary Arts. He was an exceptional skier and earnest golfer. He loved his weekend walks along the beach in Encinitas, CA and through his new neighborhood in Holladay. Dennis's requirements for happiness were simple; a good book, fresh air, close friends, dinner with Linda on Friday nights and occasionally fly fishing with his close friend and brother-in-law Don Garnas. Although he had no children of his own, Linda's daughters Casey and Hope became his own. His darling grandchildren called him their "Papa Chef". Dennis was truly a good man, beautiful inside and out! Dennis is survived by his beautiful wife Linda, daughters Casey (Sadano) Porciuncula, Fountian Valley, CA, and Hope (Jake) Malloy, Park City, UT, his four grandchildren, beloved mother Ruth R. Bird and close brother Clark Bird of Las Vegas, NV. Many close aunts, uncles, cousins, nieces and nephews that will all feel this loss as well. He was preceded in death by his mother, Helen Leda Goates, father Earl Clark Bird, sisters Diana Holt and Florence "Ponce" Madden. Many friends will miss the fellowship and true friendship of this exceptional man. Funeral services will be held Tuesday, November 21, 2006 at 12:00 noon at Larkin Sunset Gardens, 1950 East 10600 South, Sandy, UT. Friends and family may call Monday, November 20, from 5:00 to 7:00 pm and one hour prior to the services. Chef Bird was my mentor i. Park City at The Yarrow Restaurant in 1981. I still use the skills I acquired from working with him.

I was mentioning him to my wife as I was reminiscing about my time in Park City.

Dear Linda, Bird's Cafe was a magical time in the lives of many. Dennis was an extraordinary chef, friend and mentor to so many people. The seven years spent with you holds way too many memories to write here. The staff loved you, we loved to work with you. Everything was so special all the time.

My favorite memory was each Fri/Sat night, after the dinner rush, you and Dennis would dress for dinner and come out into the restaurant to relax and enjoy it all.

We will all miss Dennis terribly. We were so lucky to have known him. I speak for myself and all the staff that spent time at Bird's Cafe.

are with you. Being the baby cousin on the Goates side, I don't have
many memories of us as children, but thanks to my dad, Uncle Bruce,
once I was old enough to sit properly at resturant we went to 'Dennis' Restruants'. I will always remeber Dennis as this handsome man who came out of the kitchen to see how we were enjoying our meal. Wether it was at one of the many resturant he worked at or at your beautiful home in Encinitas. Dennis was always an example to me of someone who was so dedicated to his craft. Dear Linda, I worked for you and Dennis on 17th South and when we moved to Sugarhouse. Those were the best 10 years of my life. I always enjoyed going to work. Dennis was a wonderful mentor to work under. He was an excellent teacher and was proud of what he did. He was a perfectionist and I have remembered lots of little things he taught in the kitchen when I am preparing, and mostly in presentation of a meal. I remember he always had to have his golf time - it was a regular thing. Whenever I drive by the restaurant it reminds me of good times. We had a great team there. You and Dennis were doing what you loved and shared that with all of us. I have missed that place. Dennis was an exceptional person and will be missed. I am sorry that you have lost someone so special. I am glad that you were able to have such a happy life with him. Thanks for sharing him with the rest of us.

Dear Linda and family,

I have skiied by his side in deep powder snow at alta. Denny, was silk, not enough ooos in smooth, one of his true loves, powder skiing!!

I called Denny, just before I opened my restaurant in alta I was stressed, he said I will be over to lend a hand. Denny's perfect advice was simple but true, serve what is cold-cold and serve what is hot-hot!!!

I will remember forever, this fall fly fishing guide trip on the green river! Denny was so happy, his love for nature, and that he was doing another sport, like all of the rest with great skill and passion!!!

Denny's love for his family and friends is far beyond explination!

Dearest Linda and family,

I was stunned to read about Dennis' passing. My heart aches for you as I know all too well your heartache. I lost Mark, my husband, 10 years ago.

There are just some people who stand out in your memories of life, and Dennis was certainly one of them. His impact on me was from the Balsam Embers on Foothill when we all worked for Boyd and Arleen. I'll always remember how kind, loving and patient he was to all of us. He just seemed to keep a calm during the storm when it was so busy as it always was. I've treasured your early friendship too, Linda, when we were in school, and all of us living together in San Francisco.

The only saving grace in this tragedy is your having 24 wonderful and loving years with "the love of your life." I remember how happy you were when you met and married him. I can see from his Obituary, he never changed from the last time I had contact with you.

I would love to re-connect when you get a chance. I wish I could help make it easier for you, but, as I said, I too know your pain and maybe I can help along the way.

I met and worked for Dennis at his first restaurant on 17th South. Linda interviewed me for a manager position. The three of us including
members of our staff, worked endless hours preparing to open "Bird's Cafe" in Sugar House. Dennis once said he spent $50 for his boxer shorts, now remember folks, that was in the 80's. Thank you Dennis for being a part of my life. I will miss your kind and gentle ways.

I clearly remember Bird from the 328th. He made drills fun and helped us all learn. Those were times and experiences none of us will every forget. I am sooooooooo sorry for your loss. May the Lord shower you with peace at this time.
